Lightly whisk the eggs, cream and a pinch of salt together.
Add the butter to a non-stick frying pan. Allow it to melt but not turn brown.
Pour in the egg mixture and let it sit on the pan without stirring for 30 seconds.
Using a wooden spoon stir the mixture gently, lifting and folding it over from the bottom of the pan.
Allow it to sit for another 10 seconds and repeat the stirring / folding until the eggs are softly set and slightly runny in places,
Remove the pan from the heat and leave for a few seconds to finish cooking.
Give a final stir and serve immediately.
