Perfect Scrambled Egg

Method

Lightly whisk the eggs, cream and a pinch of salt together.
Add the butter to a non-stick frying pan.  Allow it to melt but not turn brown.
Pour in the egg mixture and let it sit on the pan without stirring for 30 seconds.
Using a wooden spoon stir the mixture gently, lifting and folding it over from the bottom of the pan.
Allow it to sit for another 10 seconds and repeat the stirring / folding until the eggs are softly set and slightly runny in places,
Remove the pan from the heat and leave for a few seconds to finish cooking.
Give a final stir and serve immediately.

Perfect Poached Egg

Method

Bring the saucepan of water and vinegar to boil and then turn down to a very low simmer
Break the egg into a cup
Swirl the water to create a whirlpool, when the swirling has almost stopped, gently add the egg to the centre of the saucepan and poach for three minutes.
Remove with a slotted spoon and drain on some kitchen paper.
The ‘perfect’ poached egg has a runny yolk and no raw white remaining

Perfect Boiled Egg

Method

Place the egg in a saucepan and cover with cold water.
Bring to the boil, then reduce the heat to a gentle simmer for 3-7 minutes, depending on how you like your eggs cooked.
After 3 minutes they will be really soft and after 5 minutes both the white and the yolk will be set.
Take the top of the egg immediately as this will stop the egg from cooking any further

3 mins – really soft boiled yolk and set white
4 mins – slightly set yolk and set white
5 mins – firmer yolk and white
6 mins – hard boiled with lightly soft yolk
7 mins – firmly hard boiled
